Ingredients:
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Instructions:
In a mixing bowl, whisk together the flour, baking powder, and salt until well combined.
In a separate bowl, beat the butter and sugar together until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually mix in the flour mixture until the dough comes together.
Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour or overnight.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch.
Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet.
Bake for 8-10 minutes, or until the edges are just beginning to turn golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Decorate the cooled cookies with icing or sprinkles as desired.
