  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup unsalted butter, at room temperature

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

For rolling:

  • 1/4 cup granulated sugar

  • 2 teaspoons ground cinnamon

Instructions:

  1. In a mixing bowl, whisk together the flour, cream of tartar, baking soda, and salt until well combined.

  2. In a separate bowl, beat the butter and sugar together until light and fluffy.

  3. Beat in the eggs and vanilla extract until well combined.

  4. Gradually mix in the flour mixture until the dough comes together.

  5. Cover the dough and refrigerate for at least 1 hour or overnight.

  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  7. In a small bowl, mix together the sugar and cinnamon for rolling.

  8. Shape the dough into 1-inch balls and roll them in the sugar mixture.

  9. Place the cookies on the prepared baking sheet and bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.

  10. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
