Ingredients:

  • 1 box of chocolate cake mix (plus ingredients to make the cake)

  • 1.5 quarts of ice cream (flavor of your choice)

  • 1 1/2 cups of chocolate chips

  • 1/4 cup of heavy cream

  • Whipped cream and additional chocolate chips for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (180°C). Prepare the cake mix according to the instructions on the box.

  2. Pour the cake batter into two 9-inch round cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  3. Let the cakes cool completely.

  4. Once the cakes are cooled, remove the ice cream from the freezer and let it sit at room temperature for a few minutes until it's slightly softened.

  5. Line one of the cake pans with plastic wrap, leaving enough overhang on the sides to fold over the top of the ice cream.

  6. Scoop the softened ice cream into the prepared cake pan and spread it out evenly.

  7. Place the other cake layer on top of the ice cream and press it down gently.

  8. Cover the cake pan with plastic wrap and freeze for at least 2 hours, or until the ice cream is firm.

  9. In a small saucepan, heat the heavy cream until it begins to simmer.

  10. Remove from heat and stir in the chocolate chips until completely melted and smooth.

  11. Let the chocolate ganache cool for a few minutes.

  12. Remove the cake from the freezer and flip it over onto a serving plate.

  13. Pour the chocolate ganache over the top of the cake and let it drip down the sides.

  14. Return the cake to the freezer and freeze for another 30 minutes to set the ganache.

  15. Before serving, garnish the top of the cake with whipped cream and additional chocolate chips, if desired.
