  • 2 cups grated carrots (about 4-5 medium carrots)

  • 1 cup chopped walnuts or pecans (optional)

For the cream cheese frosting:

  • 8 oz cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 4 cups powdered sugar

  • 2 teaspoons vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans with cooking spray or butter.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

  3. In a large bowl, beat together the sugar, oil, and eggs until smooth.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Stir in the grated carrots and chopped nuts (if using).

  6. Divide the batter evenly between the prepared cake pans.
