Ingredients:

  • 8 large eggs

  • 1/4 cup milk

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 1 cup chopped vegetables (e.g. bell peppers, onions, mushrooms, zucchini, etc.)

  • 1/2 cup shredded cheese (e.g. cheddar, mozzarella, feta, etc.)

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

  3. Heat an oven-safe skillet over medium heat and add the olive oil.

  4. Add the chopped vegetables to the skillet and cook for 5-7 minutes or until they start to soften.

  5. Pour the egg mixture over the vegetables in the skillet, making sure to distribute the eggs evenly.

  6. Use a spatula to lift the edges of the frittata and let the uncooked eggs flow to the bottom.

  7. Once the edges are set, sprinkle the shredded cheese over the top of the frittata.

  8. Place the skillet in the preheated oven and bake for 10-15 minutes, or until the eggs are fully cooked and the cheese is melted and golden brown.

  9. Remove the skillet from the oven and let the frittata cool for a few minutes before slicing and serving.
